Jamaican Roast Beef

Ingredients - Jamaican Roast Beef

  • 3-4 lbs. beef tenderloin
  • 3 cloves of garlic, finely chopped
  • ¼ soy sauce
  • 1 scotch bonnet pepper, minced or 1 tbsp. pepper sauce (optional)
  • 2 sprigs thyme, chopped
  • 1 stalk escallion, finely chopped
  • 1 medium sized tomato, finely chopped
  • 1½ tbsp. salt (or salt to taste)
  • 2 tbsp. sage powder
  • 2 tbsp. vegetable oil / olive oil (for pot roast only)
  • 2 tsp. sugar
  • 1 tsp. ground pimento (optional)
  • 3 to 4 cups unsalted vegetable stock (for more flavor)

 

Directions - Roasting Beef

  1. Wash beef thoroughly with 2 tbsp vinegar and water. Drain excess water.
  2. Mix all seasoning together: garlic, soy sauce, pepper, thyme, escallion, salt, tomato, sage, sugar, and pimento.
  3. Use a knife (sharp, narrow and long) to pierce the beef in deep but small cuts.
  4. Rub the seasoning all over the meat.
  5. Cover and refrigerate overnight

For Oven Roast:

  1. Preheat oven to 350 degrees F.
  2. Place the meat in a roasting pan and loosely cover with aluminum foil.
  3. Roast for an hour, then uncover and continue roasting for 10-40 minutes (20-25 minutes total per pound), or until cooked when tested.
  4. Transfer the beef to a platter; let it cool for 10-15 minutes before carving.

For Pot Roast on Stove Top:

  1. Remove vegetables and seasonings from meat.
  2. Put oil into Dutch oven or cast iron pot and heat on high until hot and smoking.
  3. Add beef, and brown on all sides.
  4. Lower heat and add the excess vegetables and seasonings. Spread evenly on all visible sides of the roast.
  5. Cover and cook on top of the stove on medium heat for 3-4 hours, baste often with juice in pot and add vegetable broth when moisture is needed.
  6. Continue to baste and add broth until fully cooked.
  7. Transfer the beef to a platter; let it cool for 10-15 minutes before carving.
  8. Thicken spicy gravy with corn starch or flour.
  9. Serve as desired.

Use your oven or cast iron pot and heat on high until hot and smoking to bring out the best Jamaican flavor.
